My sister planted horse radish on our mother’s property many years ago (20 yrs?). I was walking the property recently and discovered a large plant that my phone app identified as horse radish. I have done some initial internet searches that recommend harvesting in fall and within one year of planting. So, would it be worth digging these roots up? Also, how long can horseradish be preserved? I would probably pickle some immediately, and dehydrate the rest. Any experience/ideas would be appreciated.

Hmmm…you have almost peaked my curiosity. I love me some radish whether drawn by horses or not. Let me get back to you on that.
Don’t know about horse radish but I do plant radish in my veggie garden and turn it under to and my soil before I plant my corn.
Since I use living soil for my cannabis, that would not apply.
